Nearly 20 years ago, Guillermo Alvarez Schulenburg set out to scientifically codify the natural production of flavour through fermentation. Since then, he has worked with alcoholic and non-alcoholic beverage producers to develop products and build production systems that are consistent, scalable, and commercially viable.

At its core, his work is about turning complex fermentation into controlled, repeatable, commercial processes.

His work combines deep expertise in applied microbiology and fermentation with hands-on experience in manufacturing, allowing him to design, optimise, and stabilise complex production processes—from early-stage development through to large-scale commercial supply.

He has supported businesses in scaling production, improving consistency, and resolving critical technical challenges across brewing and functional beverages.

His experience spans startups through to businesses supplying major UK retail and hospitality markets.

Today, he specialises in fermentation process design and solving the challenges that prevent businesses from scaling.Because in this industry, great products don’t fail—bad processes do.
